Our know-how and the quality of our Terroir make this wine unique.
Cultural practices: traditional, done in a sustainable way and influenced by naturals philosophy and
dynamics methods.

Grape-varieties and vineyard:

100% Pinot Meunier. However there are a few Chardonnay, Pinot Noir and
Fromenteau vine stocks in those parcels.

deep, with a little of flints and little stones. Chalky subsoils.

Grapes are picked up by hand when fully ripen with a precise selection
Destemming and maceration for 12 to 16 hours depending on the years
Alcoholic fermentation (with natural yeast) in barrels, aged of 4 years minimum
No malolactic fermentation
Ageing for 6 months and light filtration before bottling during the spring time
Disgorging and dosage: disgorging « à la volée » (by hand), and dosage at 0 - 5 Gr/l (Extra-brut)
Tasting notes:
- Elin Mc Coy – 10 best wines of 2009: it’s a subtle mix of spicy scents and bright berry tones.
With wines like this, no wonder demand for grower Champagnes keeps rising.
- Stephen Tanzer: Pungent, mineral-driven aromas of red berries and botanical herbs, plus a strong
note of fresh rose; becomes richer with air, picking up cherry and juniper qualities that carry onto the
palate... Pretty impressive stuff and complex....92/100
-John Gilman: complex mélange of cherries, cranberries, wheat toast, rye toast, a deep base of
chalky soil tones, hints of juniper berry and a bit of cinnamon. On the palate the wine is full-bodied,
deep and soil-driven, intense finish. Impressive juice...91/100
Wine and food matching: this unique and rare Champagne is perfect for a drink before meal. It will
be excellent with game or poultry. In dessert, this Champagne is ideal with a red fruits crumble.
