The history of Herdade do Cebolal goes back to 1876 when the wine production in this property began. Always in the same family and with the same passion, production and development are currently guaranteed by the 4th and 5th generation of producers, Isabel and Luís.
This property is located 10km from the sea, in a valley between the Sierra de Santiago and the Serra do Cercal, and the 23ha vineyard faces south where the sea winds give the wines freshness and high acidity. The type of soil gives the wine important characteristics of complexity and intensity of aromas with a certain minerality.
Despite the familiar nature of Herdade do Cebolal and the maintenance of traditions, the new technologies are also an essential presence to guarantee the innovation necessary to the present times. The deep wine knowledge associated with values, ethics, responsibility and respect for man and nature gives rise to this patrimony that identifies them as family.
Region: Península de Setúbal
Grape varieties: Alicante Bouschet, Touriga Nacional, Petit Verdot
Soils: Rich in clay and limestone
Type Clime: The summer days temperature is 34-36ºC and in the night the temperature is 12º-15ºC
Vinification: The grapes were harvested at the end of August and September dictated by climate conditions and the maturity of the grapes. The grapes bunches are hand selected and picked. The vinification process maintains a balance between traditional wine-making practices and new
techniques, know-how and trends. The wine was fermented and aged in controlled temperature (20ºC) in clay wine press and stainless steel vats for one year. The wine aged in French oak barrels for two and half year.
Tasting notes The color is very dark purple. The nose evokes a Bordeaux aging cellar, with this blend of black fruits / spices and luxurious oak. The palate presents a velvety flesh, bordering on pulpy, presenting the same mix as on the nose, with perhaps a slightly more marked toasted side. The finish is just right on tannic, on candied blackberries, cocoa and toasted notes.
