Vinification hand harvest to 15kg cases; all bunch pressing without desteaming, french oak barrel fermentation with indegenous yeasts, 12 months maturation
Tasting notes : the color is brilliant straw yellow. The nose is both ripe and fresh, on roasted apple and pear, crème brûlée, but also citrus zest and sea spray. The mouth is tense , stretched by an invisible thread, while offering a round, airy, very fresh substance, with a fairly marked saline / iodine side. The finish is finely chalky and lemony, with a vegetal touch that brings tonicity .
