Variety Sercial - Madeira - Oxidised half sweet wine - 75 cl bottle - Ready to drink, but can be kept some years - Serve at 14°
VINEYARDS AND VINIFICATION
Grapes from various quality vineyards from Jardim da Serra and Ribeira da Janela were used.
Grapes were pressed in a pneumatic press. Arresting of fermentation takes place at the desired degree of sweetness by adding vinic alcohol. (96%)
MATURATION & BOTTLING
Sercial aged in French oak casks during 10 to 14 years by the "Canteiro" method. For this blend we selected wines from our warehouse in Funchal with stable temperatures year round that originate wines very well balanced in sugar and acidity.
Alcohol 18,97% Vol.
Total sugar 49,8 g/dm3
Volatile acidity 0,72
SERVING & CELLARAGE
This wine was naturally aged in cask and bottled without the use of caramel. To show it at its best serve between larder (12ºC) and low room temperature (19ºC).
TASTING NOTES AND HARMONIES
This wine was filtered and does not require decanting. It is excellent as an aperitif but is also exceedingly good with starters such as duck or geese pate, French onion soup, octopus salad or steak with caramelized onions. It was bottled ready for drinking and will keep well once opened.
Lighter amber colour. Refreshing citron and marmalade bouquet with hints of vanilla and dried apricots. The refreshing palate has an acidity alive with spicy raisins, roasted almonds and orange rind. The finish is rather crisp and clean in the mouth. Delicious.
