MATURATION & BOTTLING
This Boal is made from grapes from a small vineyard trained on a pergola so close to the soil that people almost have to lie down in order to pick them.
I was always drawn to this small vineyard because of this particular characteristic. But then I realized that it also produced beautiful grapes with acidity out of the ordinary, which is why I always harvested and kept this Boal separately, classifying it as a single vineyard as well. The exceptional way this colheita presented itself, with an outstanding concentration paired with a fantastic acidity balancing the wine perfectly was what led me to share it with all of you. From this wine we bottled 744, 500ml units all individually numbered.
This wine was naturally aged in cask and bottled without the use of caramel. To show it at its best serve between larder (12ºC) and low room temperature (19ºC).
