Sauvignon Blanc - région Touraine - white dry fruity and nervous

Henry Marionnet created these vines from vineyard shoots in 1992,

- pampered them in a nursery for a year
- replanted in a soil of clay, flint and sand, well drained
- an exceptional vine as before the phylloxera en 1872,
- ungrafted, so an extraordinary quality

Vinification : the fruit,
- after basking in the sun
- is harvested exclusively by hand
- delicately set in baskets
- severe sorting keeping only the first fruits
- brought into the cellar
- the fruits are delicately de-stemmed
- protected from contact with air
- set into the press with luxurious precaution
- the precious juice is cooled to rest at 5° for 24 hours
- then separated from the mire
- then the temperature rises to 18°
- the lees are racked to control the natural fermentation process
- No rising agents nor suiphites added
- filtration before bottling
