Soil and climate : The vines of Château du Cèdre root in two different types of soil: The terroirs, composed of stony clay and limestone, give straight wines with fine tannins, whereas more powerful and dense wines derive from soils composed of clay, sand and rich in pebbles.
Grape varieties : 100% Viognier
Type of winemaking : Fermentation in slightly charred 500 liter oak barrels. 50% of the barrels are renewed every year. Fermentation temperature lies between 18° and 20° celsius. The wine ripens for 9 months on fine lees and is moderately filtered before bottling.
Tasting notes : A very characteristic nose with smell of apricot and violet. The mouth is well balanced and elegant, showing a long final with a lot of fruit and finesse.
